A Fun Fruit Snack

O(6) was SO excited when I made this fruit tree snack for her!  (E was out on a daddy/daughter date) The idea for this fruit tree snack came from  Pinterest  (I'm linking to my pin, but it doesn't link to the original picture, so I'm not sure where this idea actually orignated).

O's Recent Bento Box Lunch

I was very happy with O's simple bento box lunch last week, so I thought I'd share.  She must have been happy with it, too, because she ate everything!  I was shocked since she usually only eats about a third of what I send (she eats the rest later for an afternoon snack).

She loved her gingerbread man shaped cheese.

On the bottom layer, she had wheat thin sticks with dark chocolate almond butter for dipping, mandarin oranges, and a Hershey's kiss.  She was SO excited about the Hershey's kiss, and she told me that she ate it first.

On the top layer, she had snow peas and carrots with ranch dip and another Hershey's kiss.  She loves snow peas and thinks it is amazing that she eats peas raw :)

A Kiwi Snack

One of O's daily snacks is kiwi.  She loves it, and I love that it is so healthy and easy to prepare.  I usually peel and slice her kiwi, but occasionally she wants to fix it herself.

First, she washes the kiwi.  Then she slices it in half.

Finally, she eats it with a spoon.

It doesn't get much easier than that!

Dark Chocolate Almond Butter Snack

We've recently discovered dark chocolate almond butter, and O loves it! She's spreading it on whole grain Wasa crackers to make a cracker/almond butter sandwich in this picture. Right after I took the picture, she started intentionally smearing the almond butter on her fingers as she spread it on the cracker so that she could lick her fingers. Silly girl!

Banana Boats

Guh-guh loves to make fun and healthy snacks for the girls. Today they made banana boats. The girls cut the triangles (with help) and taped them to straws. They then stuck them in the bananas to make banana boats! Fun, easy, and delicious!

Chocolate Covered Bananas

O requested bananas when I asked her what she wanted to eat on her birthday. She said it in an excited tone like bananas are a special treat that she doesn't get very often...she eats AT least one, usually 2, bananas a day. So... I decided to make frozen chocolate covered bananas. They are covered in dark chocolate, and I rolled most of them in walnuts and a few in sprinkles. O is going to be so excited! We are having a picnic tomorrow after storytime at the library, so I hope the bananas don't melt before we eat them :)

Homemade Apple Chips

When I saw Megret's post about making homemade apple chips, I knew we had to try it. O loves apples, and this is a perfect way to enjoy them. Luckily, Elliott was able to find organic apples at the grocery store near his office. I didn't have the nutmeg or cloves (and I didn't think to ask him to get them from the store), so I mixed cinnamon and sugar and put it in the empty cinnamon container for O to sprinkle on the apples. She loved it!

Here is the recipe from Megret's blog:

APPLE CHIPS

makes 25-50 chips, depending on slice thickness and size of apple
1-1/2 T. sugar

1 t. cinnamon

pinch cloves

pinch nutmeg

1 large crisp apple (Braeburn or Granny Smith)
Preheat oven to 200 degrees, then line a baking sheet with parchment paper.

I also didn't have parchment paper, so I just coated the pan with olive oil

Crushing Cheerios

O used the mortar and pestle to crush Cheerios. Today was the 1st time, we've used it and she did a good job. She needed some help to crush the Cheerios, but she enjoyed trying to crush them:) I then poured them into her organic applesauce (the mortar and pestle is made of stone, and its too heavy for O to lift). She enjoyed mixing the Cheerios into her applesauce. She loves to mix and says "mix" all the time :)
